Chuối là một trong những loại quả có nhiều vitamin và khoáng chất, thế nhưng khi thời tiết nóng, chuối thường không để được lâu. Sao chúng mình không thử biến chúng thành những chiếc bánh ngọt ngào, thơm lừng mà cách làm lại vô cùng đơn giản nhỉ?
Bơ cho vào một chiếc chén nhỏ, ngâm trong một âu nước nóng to cho bở tan chảy hoàn toàn. Chuối bóc vỏ, để lại chừng 1/3 trái để cắt miếng xếp lên bánh trước khi nướng. Phần chuối còn lại đem dầm nhuyễn.
Trộn đều chuối dầm với bơ, 200g bột mì, 120g đường, 1 lòng trứng đã đánh tan, 1 muỗng cà phê muôi nở và 1/4 muỗng cà phê muối.
Làm nóng lò ở nhiệt độ 170 độ C. Chuẩn bị sẵn khuôn muffin để đổ bánh. Chia bột vào khuôn bánh đã chuẩn bị đến khoảng gần 3/4 khuôn. Phần chuối đã để dành lại cắt miếng mỏng vừa, đặt lên giữa mỗi bánh, ấn nhẹ để ổn định vị trí.
Nướng bánh trong khoảng 40 phút cho đến khi bánh đã chín vàng đều. Có thể thử bằng cách châm một cây tăm sạch vào giữa bánh, rút ra không còn ướt là được.
