Làm sạch cánh gà và sử dụng một con dao để khứa 2 đường song song 2 bên miếng cánh gà, giúp thịt gà dễ ngấm được gia vị vào sâu bên trong hơn.
Tiếp đến rắc vào cánh gà 8g muối và 1-2g tiêu, dùng tay xoa bóp cho gia vị ngấm đều. Cho cánh gà vào túi nylon, bọc kín rồi ướp trong ngăn mát tủ lạnh khoảng 2-4 tiếng đồng hồ.
Cánh gà sau khi ướp cho ra khỏi tủ lạnh, dùng khăn giấy thấm khô nước. Đun nóng dầu ăn trong chảo, xếp các miếng cánh gà vào chiên với lửa nhỏ. Chiên khoang 3-4 phút thì trở mặt một lần. Chiên cho đến khi cánh gà chiến vàng và thơm là được.
